Delicious stuffed and baked pepper halves with minced meat & feta

For 4 people Ingredients:

4 large bell peppers (red, yellow or orange)
300 g beef or mixed minced meat
1 small onion (diced)
1–2 garlic cloves (finely chopped)
100 g cooked rice (optional: couscous or bulgur)
150 g feta (crumbled)
1 can of chopped tomatoes (approx. 400 g)
1 tbsp tomato paste
100 g grated cheese (e.g. Gouda or mozzarella)
2 tablespoons olive oil
Salt & Pepper
Spices to taste: e.g. paprika powder , oregano, or chili .

Prepare the peppers:

Halve the peppers lengthwise, remove the seeds, wash and place them cut-side up in a baking dish.

Fry the minced meat:

Heat olive oil in a pan. Sauté the onion and garlic until translucent. Add the ground beef and fry until crumbly. Season generously with salt, pepper, and spices.

Stir in tomatoes & rice:

Briefly roast the tomato paste, then stir in the chopped tomatoes and cooked rice. Simmer for about 5 minutes. Remove from heat and stir in the feta.

Fill peppers:

Fill the pepper halves with the minced meat and feta mixture. Sprinkle with grated cheese.

Bake:

Bake in a preheated oven at 180°C (top/bottom heat) or 160°C (fan oven) for about 30 minutes, until the peppers are soft and the cheese is nicely browned.

✅ Tasty tip:

For a slightly lighter version, you can replace half of the minced meat with grated zucchini or carrots – it tastes great and saves calories.
