Our first tip for you: Always freshly grind pepper shortly before use, either in a mortar or a grinder. This way, you'll get the full power of the peppercorns and the true flavor in your dish.
Ground pepper is of course not of inferior quality, but it has significantly less kick and does not smell quite as intense, as the aromas evaporate during longer storage.
